    Kristi's Chicken Enchiladas

    List of Ingredients




    4 boneless chicken breasts, cooked and shredded
    8 oz. cream cheese
    1 small onion, chopped
    1 small can of chopped chilies
    Small flour tortillas
    8 oz. shredded monterey cheese
    2 cups whipping cream

    Recipe



    Melt cream cheese with onion and chilies, mix in chicken. Fill tortillas with chicken mixture, place seam down in greased pan. Sprinkle cheese on top of filled tortillas and pour whipping cream over top and bake at 375ºF till cheese is bubbly and tortilla edges are slightly browned.

    Now here is what I did.... I used 4 split breast they were huge... I added a chopped jalapeno to the mixture. I also used 2 (8 oz.)pkgs. cream cheese. And I added an extra 8 oz. of pepper jack cheese to the top. and MY recipe made about 18 full enchiladas hers probably makes about 12.
