    Theresa's Alice Springs Chicken with Honey Mustard Sauce

    6 Chicken Breasts, boneless, skinless, 1/2 inch thick
    1 lb bacon, fried crisp
    3 cups Colby/Montery Jack Cheese, shredded
    McCormick Season All
    1 cup mushrooms, sliced
    Honey Mustard
    Parsley for Garnish

    Recipe

    Rub chicken breasts with Season All and set aside to marinade for 1 hour in refrigerator.

    While breasts are marinating, fry bacon crisp and drain. Crumble bacon and set aside. Shred cheese and set aside. Take chicken from marinade and sautee on medium heat in pan with just enough oil to prevent sticking.

    Cook on both sides until a slight golden color and cooked in the middle, but not dry. Remove from pan.

    Place chicken in a 13x9 inch baking dish. Spread chicken breast liberally with honey mustard, cover with a layer of mushroooms, then bacon and then sprinkle with shredded cheese. Chicken should be completely covered. Place in 350ºF oven for 20 to 30 minutes until cheese is melted and chicken is heated through.

    Sprinkle with parsley. Serve with extra honey mustard on side.

    Honey Mustard

    1/2 cup yellow mustard
    1/3 cup light corn syrup
    1/3 cup honey
    1/3 cup mayo

    Blend all ingredients together until completely smooth and free from lumps.

This is a favorite meal at my sister's house and my daughter loves this stuff. I don't know how it compares to the Alice Springs chicken recipe I've seen on the board, but this one is good. I hadn't eaten it until a couple of weeks ago and I have to agree..it's good. And this Honey Mustard is to die for....I know it looks strange, but it's better than any other I've tried. Theresa says she tried many recipes before she settled on this one as the best. This stuff would be great with french fries, or pretzels, or anything else you like dipping in Honey Mustard.
