    ALMOND SHORTBREAD

    1 cup (2 sticks) butter, softened
    1 cup granulated sugar
    1 large egg yolk
    1 tsp pure almond extract
    2 cups all purpose flour
    1 cup blanched almonds, finely ground

    Recipe



    Heat oven to 325�F. Lightly grease 13" X 9" X 2" baking pan.

    In large mixing bowl, cream butter; gradually add sugar, beating until light & fluffy. Add egg yolk; beat well. Stir in almond extract. Gradually add flour & ground almonds, stirring until well blended. Press dough into prepared baking pan.

    Bake in 325�F oven 40 mins until lightly browned. Cut into 2" squares while warm. Cool in pan 10 mns; remove to wire rack to cool completely.

    Makes about 2 dozen squares.
