Maraschino Cherry Bars with Pecans

Crust: 2 cups flour - 1/3 cup sugar - 3/4 cup butter (or marg.), softened
Filling: 2 eggs, slightly beaten - 1 cup brown sugar - 1/3 cup flour - 1-1/2 tsp. baking powder -1/2 tsp. salt - 1/2 tsp. vanilla - 10 oz. jar red or green maraschino cherries, drained/chopped (reserve juice) -1/2 cup chopped pecans
Frosting: 2 T. butter, softened - 2-1/2 cups confectioners' sugar - 3-4 T. cherry juice
Recipe
Heat oven to 350ºF.
In a large bowl, combine first 3 ingredients; blend until crumbly. Press into ungreased 9x13" pan. Bake 12-15 minutes or until lightly browned.
In small bowl, combine all filling ingredients. Pour over crust. Bake 20-25 minutes or until toothpick comes out clean. Cool.
In small bowl, combine all frosting ingredients; beat until light and fluffy. Spread frosting over cooled bars; sprinkle with red sugar crystals. Makes 24-36 bars.
Review: These are very good and worth another round, maybe for the Christmas tray. I used pecans, rather than walnuts most often used, in this variation of cherry bars. I think I'll make another batch using green cherries just to see how it looks. Lin_65 or Blueridge_va
