    Amish Sugar Cookies With Nuts

    4 1/2 cups sifted flour
    1 tsp baking soda
    1 tsp cream of tartar
    1 cup butter or regular margarine
    1 cup cooking oil
    1 cup sugar
    1 cup sifted confectioners sugar
    2 eggs
    1 tsp vanilla
    1 cup chopped pecans or walnuts
    sugar

    Preheat oven to 375ºF. Grease cookie sheets. Sift together the flour, baking soda, and cream of tartar. Set aside. Cream together the butter, oil, 1 cup of sugar, and confectioners sugar into a mixing bowl until light and fluffy; using an electric mixer at medium speed. Add the eggs, one at a time, beating well after each addition. Blend in the vanilla. Gradually stir in dry ingredients into the creamed mixture. Mix well. Add the walnuts. Drop mixture by rounded teaspoonfuls onto prepared cookie sheets, about three inches apart. Flatten each cookie with the bottom of a greased drinking glass dipped in sugar. Bake for 10 minutes or until lightly browned around the edges. Remove from baking sheet and cool on wire racks. Yield: about 7 dozen
