    Cream Cheese Finger Cookies

    1/2 c. butter (no substitutes), softened
    4 oz. cream cheese, softened
    1 tsp. vanilla extract
    1 3/4 c. all-purpose flour
    1 T. sugar
    Dash salt
    1 c. finely chopped pecans
    Confectioners’ sugar

    Recipe



    In a mixing bowl, cream butter and cream cheese. Beat in vanilla. Combine the flour, sugar and salt; gradually add to creamed mixture. Stir in pecans (dough will be crumbly). Shape tablespoonfuls into 2 inch logs. Place 2 inches apart on ungreased baking sheets.

    Bake at 375ºF for 12-14 minutes or until lightly browned.

    Roll warm cookies in confectioners’ sugar; cool on wire racks.
