    Master cookie mix:

    4-1/2 cups all-purpose flour
    1-1/2 cups sugar
    1-1/2 cups packed brown sugar
    2 teaspoons salt
    2 teaspoons baking soda
    1-1/2 cups shortening

    Directions: Combine the flour, sugars, salt, and baking soda. Cut in shortening until crumbly. Store in an airtight container in a cool dry place for up to 6 months.

    Yield about 10 cups.

    Peanut Butter Cookies

    1/2 cup peanut butter
    2 eggs
    1 teaspoon vanilla extract
    2 cups Master Cookie Mix

    Directions: Combine ingredients. Drop by rounded tablespoonfuls 2-in. apart onto ungreased baking sheets. Bake at 350º for 10-12 minutes or until set and edges are lightly browned. Yield: about 2-1/2 dozen.

    Cinnamon Raisin Cookies

    2 eggs
    1/2 teaspoon ground cinnamon
    1/2 teaspoon almond extract
    2-1/2 cups Master Cookie Mix
    1/2 cup raisins
    1/2 cup chopped walnuts

    Directions: Combine first four ingredients. Stir in raisins and nuts. Drop by rounded tablespoonfuls 2-in. apart onto lightly greased baking sheets. Bake at 350º for 10-12 minutes or until set and edges are lightly browned. Yield: about 2-1/2 dozen.


    Banana Cookies

    2 eggs
    1/2 cup mashed ripe bananas
    1/4 cup all-purpose flour
    1 teaspoon vanilla extract
    2-1/2 cups Master Cookie Mix
    1/2 cup chopped pecans

    Directions: Combine first five ingredients. Stir in pecans. Drop by rounded tablespoonfuls 2-in. apart on lightly greased baking sheets. Bake at 350º for 10-11 minutes or until set and edges are lightly browned. Yield: about 3 dozen.
