1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 1/2 cups all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
1 cup sour cream
1 teaspoon lemon extract
Grated rind of two lemons


Recipe

Preheat the oven to 350ºF.

Cream the shortening and sugar together until light and fluffy. Beat in the eggs, one at a time.

Sift together the flour, salt, baking soda and baking powder and add alternately with the sour cream to the batter. Stir in the lemon extract and lemon rind.

Drop by teaspoonfuls, two inches apart, onto greased baking sheets. Bake fifteen minutes, or until lightly browned at the edges. Tops will be pale.

Yield: About four dozen
