Pecan Butterballs

1 cup butter (no substitutes)
1/2 cup confectioners' sugar, plus extra for sprinkling
1 tsp. vanilla extract
2 1/4 cups all-purpose flour
1 cup coarsely chopped pecans Recipe
Cream butter with sugar. Add vanilla. Stir in flour (mixture will be stiff). Mix in nuts. Roll into walnut-sized balls.
Bake on ungreased or parchment lined cookie sheets at 350 degrees 8-10 minutes. Cool completely.
Roll in additional confectioners' sugar. Makes about 4 dozen.
