Lemon Crisp Cookies

List of Ingredients




1 pkg lemon cake mix~dry
1 cup crisp rice cereal
1/2 cup butter or margarine~melted
1 egg~beaten
1 tea grated lemon peel



Recipe



In large bowl, combine all ingredients until well mixed (dough will be crumbly). Shape into 1" balls. Place 2" apart on ungreased baking sheets. Bake at 350ºF for 10-12 mintues or until set. Cool for 1 minute, then remove to a wire rack to cool completely
Yields 4 dozen

I used about 1 to 1 1/2 tablespoons of fresh lemon juice along with my lemon peel and they turned out great! J
