Jelly Bean Cookies

1/2 c butter or margarine
1/2 c sugar
1 egg
1 tsp vanilla
1 c flour
1/4 tsp salt
1/2 tsp baking soda
assorted jelly beans

Recipe



In a mixing bowl with a mixer, beat butter and sugar. Mix in egg and vanilla. Stir dry ingredients together (flour, salt, soda) and add to wet mixture. Mix well.

Drop a heaping teaspoon on a greased baking sheet (I used parchment), permitting enough space for cookie to spread. Place 3 jelly beans on top of each cookie.

Bake in a preheated 350ºF oven for 8-10 min (mine was 10), or until edges begin to brown.

Let cool 3 minutes on baking sheet before gently moving to a wire rack to cool.

Makes about 3 dozen (mine made about 2 1/2 doz)
