1 large egg white
1 cup firmly packed brown sugar
1 tsp pure vanilla extract
1-1/2 cups finely chopped pecans

Recipe



Heat oven to 225ºF. Ungreased cookie sheets.

Beat room temp egg white until foamy. Gradually add sugar, 2 tblsps at a time, beating until stiff peaks form. Fold in vanilla & pecans. Drop mixture by heaping tablespoonfuls 3" apart onto ungreased cookie sheets.

Bake in 225ºF oven 1-1/2 hrs. Turn oven off; cool cookies in oven at least 1 hr. (Do not open oven door.) Remove from cookie sheets, using a spatula. Serve immediately or store in airtight containers.
