    1 cup butter or margarine
    1 1/2 cups sugar
    2 eggs
    1 1/2 tsp vanilla *
    3 1/2 cups flour
    1/4 tsp salt
    1 tsp baking powder

    Recipe



    Beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs and vanilla and beat until combined. Add the flour, salt and baking powder and beat until smooth.

    Using an ice cream scoop, scoop dough onto cookie sheet. Flatten slightly. Bake at 350° for 13-15 minutes.

    Ice with pink frosting and make a smiley face using a tube of decorating gel.

    Yield: 15 large cookies

    They are big, they are vanilla-y, and they are soft. I doubled the vanilla, to 1 tablespoon, and that was great, so try it when you make them. I made 20 cookies (not 15), baked them 15 minutes, and it was perfect. I am sooooo lazy I did not ice them or draw smileys. My 3-year-old looked at them and said, "Where are the sprinkles?" so on the next tray I put sprinkles, and that was good, too!
    I plan to make a batch of these for each kid's class when school starts. Kids will scarf them up!
