Mandarin Chicken for Two

1 tsp corn starch
1 1/2 Tbs soy sauce
1 Tbs cooking sherry
1/8 tsp ground ginger
1/2 tsp sugar
1 medium-size green pepper, sliced
3 scallions, sliced diagonally
1 Tbs sesame oil
3/4 cup pecan halves
10-12 ounces boneless chicken breasts, skinned
1 garlic clove, finely chopped
3 Tbs butter
1 tsp sesame oil
salt and pepper to taste

Dissolve the cornstarch in the soy sauce. Add the sherry, ginger, and sugar. Set aside. Saute the green pepper and scallions in 1 tbs sesame oil for 3-5 minutes. Remove from pan. Stir-fry the pecans for 1-2 minutes. Remove from the pan. Saute the chicken with the garlic in butter and 1 tsp sesame oil, just until the chicken loses pink color. Season lightly with salt and pepper. Add soy sauce mixture and stir until slightly thickened. Return the scallions, green pepper, and pecans to the pan. Add the mandarin oranges.
