    2 eggs
    1 (10 3/4 ounce) can cream of mushroom soup
    1 small onion, diced
    1/8 teaspoon garlic
    1/2 teaspoon salt
    1 (10 ounce) package frozen spinach, thawed & drained very well
    Dash of nutmeg

    Recipe



    Preheat oven to 350ºF. Put eggs, soup, onion, garlic & salt into a blender. Blend for 30 seconds. Add spinach & nutmeg. Blend for 30 seconds. Pour into an ungreased(*) soufflé dish or casserole & bake for 50 to 60 minutes.

    Notes: the original recipe called for 1/8 teaspoon of garlic powder, but I used 1/8 teaspoon of garlic paste (real garlic) & it tasted wonderful. Another suggestion I think would be good - this barely served the three of us & we are all small eaters - so, I would suggest to serve three, or four people all you would have to do is double everything but the spinach. Unless, of course, you don't mind having a lot of spinach (I like spinach, so I will also double the spinach)!!! I also found that it stuck to the side of the pan(*), so perhaps spraying the sides of the pan with cooking spray might be a good idea. When you think about it, this is a pretty cheap meal to make - it works out to about $4.00 to make a doubled dish!!!!
