    Barbecue Chicken Sandwiches

    Feeds 4 to 6 people

    List of Ingredients

    1-2 lb boneless skinless chicken breasts
    1 (18 ounces) jar of your favorite barbecue sauce (I love K.C. Masterpiece) -- now I use the carb opitions, good but I still love my K.C. *wink wink*
    1 medium sweet onion, sliced
    4-6 hamburger buns

    Recipe

    Remove all visible fat from the chicken and toss it in the Crockpot. Place the onion slices on top of the chicken.
    Pour the barbecue sauce over top. You may not need the entire jar, just enough to cover the chicken.

    Cook it on LOW for 8 hours or until the chicken is nice and tender.

    Shred the chicken with a fork and knife (do this in the last half hour and continue to cook). Return the chicken back into the crocpot WITH the sauce and cook for 30 minutes after you shred it.

    Scoop the mixture onto the bottom buns and top it with the top buns or use low carb wraps.

    NOTE: My DH likes to leave the breasts whole and eating it that way. I do like to sprinkle the chicken breasts with garlic salt, black pepper, and cayenne pepper; add a few dashes of hot sauce to the BBQ sauce; and throw in some diced green chilies. (It's not necessary to do this, its personal taste.)
