    Crockpot Beef Barley Soup (T&T)

    List of Ingredients

    1 pound lean stew beef, cut in 1/2-inch cubes
    1/2 cup chopped onion
    2 ribs celery, chopped
    2 medium carrots, diced
    3/4 cup barley (quick or pearl works great)
    1 bay leaf
    6 cups beef broth
    1 teaspoon salt, or to taste
    pepper, to taste

    Recipe

    In crockpot, combine stew beef with onion, celery, carrots, barley, bay leaf, and beef broth. Cook beef and barley soup on LOW in crockpot for 6 to 8 hours. Taste and add salt and pepper, to taste.

    10/31/06: I made this today. Why did I wait so long? This is very good. I used a chuck roast & cubed it up. I used more onion & celery. I left the bay leaf out and used bouillion cubes for the beef broth. I also added fresh mushrooms, sliced and sauted with the celery & carrots. I did not used salt or pepper. I cooked it on the stove top. This is a keeper!!
