    Herbed Chicken Casserole with Wild Rice

    1 - 1 1/2 pounds chicken tenders or boneless chicken breast halves, cut into strips
    1 (4 oz.) can sliced mushrooms, drained
    1/2 cup diced onion
    1 Tablespoon olive or vegetable oil
    1 teaspoon butter
    1 (6 oz.) box Uncle Bens (original) long grain and wild rice
    1 can cream of chicken soup, we use the low fat version
    1 cup water
    1 teaspoon your favorite herb mixture: parsley, thyme, etc.

    Sauté chicken pieces in oil and butter until chicken is lightly browned. Place rice and seasoning pack in crock pot. Place chicken tenders and mushrooms over rice. Combine soup and water, pour over chicken. Sprinkle with herb mixture. Cover and cook on LOW for 5 1/2 to 6 1/2 hours, or until rice is tender (not mushy). Serves 4 to 6
