    Blueberry Cobbler (T&T)

    Source of Recipe

    sister (from her friend)

    List of Ingredients

1 stick or 1/2 cup butter (margarine)
1 can fruit or cup fresh fruit
1/2 cup sugar (omit if using fruit already sweetened)
1 cup liquid, juice from fruit and water
    1 cup self rising flour
    1 cup sugar
    2/3 cup milk

    Recipe

Put butter, fruit and sugar (if needed) and liquid from fruit into baking dish (8x8 for normal recipe, 10x13 for double recipe). Heat in microwave until mixture is warm and sugar and butter are melted. (I normally just do this in a mixing bowl so I can stir it well after warming then I place it into my baking dish).

Mix flour and sugar, add milk and stir until smooth (in mixing bowl).

Pour evenly over mixture in baking dish.

Bake at 375ºF for 25 minutes.

Stacey's hints: I usually soak my fresh blueberries in about a cup water overnight if possible, I did this with my fresh frozen berries also to get the "Juice" for this recipe that it calls for. Otherwise I just used plain water. I have done this recipe with sliced peaches also, and used the juice in the can for the liquid. Make sure with any friut that it is in juice, and not syrup, or the recipe will probably be too sugary to eat!! I think heating the fruit is the KEY to this recipe, as I have done many other cobbler recipes and the fruit is usually much tougher. I usually cook until lightly browned on top, sometimes takes a little longer than 25 min. Happy cooking!!!!!
