Quickie Cheesecake

2 pkgs (8 oz each) cream cheese, softened
2/3 cup sugar
3 large eggs
1 tsp. vanilla

Preheat the oven to 350ºF. Use a 9 inch round cake pan, very well buttered. Mix all the ingredients in a large bowl until smooth. Pour into the prepared pan and bake for 30-35 mins. Let cool 20 mins.

TOPPING
While the cake is cooling, mix together well:

8 oz of sour cream
3 TBSP. of sugar
1 tsp. vanilla

When the cake has cooled for 20 mins spread the sour cream mixture over the top of the cake. Place back into the oven and bake for 10 more mins. Remove the cake from the oven after the 10 mins and let cool on a rack completely.

Refrigerate for at least 8 hrs or until thoroughly chilled.
