BACON AND ONION QUICHE
4 tbsp butter, divided
2 onions, chopped
4 eggs
1 1/2 cups milk
3/4 lb bacon, fried crisp
1 (8 oz) pkg shredded Swiss cheese
Preheat oven to 325. Spread 1 tbsp butter evenly into 9-inch pie pan. Melt remaining butter in skillet. Add onions and sauté until soft but not brown. Beat eggs, milk and a little salt and pepper until they blend.
Line bottom of pie pan with bacon strips and scatter cheese on top. Pour in egg mixture. Bake for 25-30 minutes or until custard is brown and set. No crust.
Serves 4-6

ENDIVE-ORANGE SALAD
2 bunches curly endive
2 bunches watercress
1 (11 oz) can mandarin oranges, drained
4 shallots, finely chopped
1/2 cup olive oil
4 tbsp lemon juice
1 tsp sugar
Wash endive and break in small pieces. Wash watercress and rip off stems. Combine in large bowl. Top with orange sections before serving. Combine shallots, oil, lemon juice, sugar and a little salt and pepper. Blend with fork. Pour over greens and toss well.
Serves 4-6
