SAUSAGE-POTATO CASSEROLE
2 (10 oz) cans cream of mushroom soup
1 cup milk
1 lb ground sausage, divided
2 (15 oz) cans sliced potatoes, drained, divided
1 (8 oz) pkg shredded cheddar cheese, divided
Preheat oven to 375. Combine soup and milk. Brown sausage until thoroughly cooked. Line potatoes in sprayed 9x13-inch baking dish. Pour half soup mixture over potatoes and half sausage. Spread with half cheese. Repeat layers. Bake for 25 minutes.
Serves 6-8
(This can be halved for a smaller family.)

RED-NECKED SALAD
2 (15 oz) cans shoe-peg corn, drained
2 (15 oz) cans black-eyed peas, drained
1 tomato, diced
1 red onion, sliced
1 (16 oz) bottle zesty Italian dressing
Combine corn and peas in bowl. Add tomato and onion. Pour about half dressing over mixture, add more as needed and refrigerate 4-5 hours.
Serves 6
