    SMOTHERED STEAK


    1 1/2 lb (3/4 inch) thick beef round steak

    1/3 cup flour

    3 tbsp oil

    3 medium onions, sliced

    1 (10 oz) can beef broth

    1 tbsp lemon juice

    1 tsp garlic powder


    Cut meat into serving size pieces. Pound flour into steak with a meat tenderizer. In large skillet, brown steak in oil and top with onion slices. In medium bowl, combine remaining ingredients. Pour over steak, bring to a boil and reduce heat to simmer. Cover and cook slowly for 1 hour. Check steak while cooking and add a little water if needed.

    Serves 4

    SPINACH SALAD

    1 (10 oz) pkg baby spinach

    1 bunch fresh parsley, chopped

    1 cup grated Romano cheese

    1 (4 oz) pkg blue cheese, crumbled

    Vinaigrette dressing


    Combine spinach and parsley in large bowl. Just before serving, pour enough dressing to moisten greens. Toss well. Sprinkle with cheeses. Toss again. Season with salt and pepper.

    Serves 4
