    THREE-CHEESE CHICKEN CASSEROLE


    1 (10 oz) pkg small egg noodles

    3 tbsp butter

    1 green and 1 red bell pepper, chopped

    1/2 cup chopped celery

    1/2 cup chopped onion

    1 (10 oz) can cream of chicken soup

    1/2 cup milk

    1 (6 oz) jar sliced mushrooms, drained

    1/2 tsp pepper

    1 (16 oz) carton small curd cottage cheese, drained

    4 cups cooked, diced chicken or turkey breasts

    1 (12 oz) pkg shredded cheddar cheese

    3/4 cup freshly grated parmesan



    Preheat oven to 325. Cook noodles according to pkg directions and drain. Melt butter in skillet and sauté peppers, celery and onion. In large bowl, combine noodles, sautéed mixture, soup, milk, mushrooms, pepper, cottage cheese, chicken and cheddar cheese. Pour into sprayed 9x13-inch baking dish. Cover and bake for 35-40 minutes or until bubbles around edges of casserole. Remove from oven, sprinkle parmesan cheese over casserole and return to oven for 5 minutes.

    Serves 4-6

    BELL PEPPER SALAD


    1 medium red bell pepper, sliced

    1 medium green bell pepper, sliced

    1 medium yellow bell pepper, sliced

    1/4 cup vinaigrette dressing


    Mix peppers in large bowl and toss with dressing. Refrigerate until ready to serve.

    Serves 4

    ----------------------------

    GRANOLA SUNDAE

    1 cup vanilla yogurt

    1 cup granola mix

    2 cups sliced bananas

    2 cups strawberries, sliced


    Layer yogurt, granola and fruit in 4 stemmed glasses or bowls. Refrigerate until ready to serve.

    Serves 4
