    Oriental Honey Lemon Chicken

    List of Ingredients




    2 lbs. chicken pieces or chicken breasts

    MARINADE:
    3 tbs. soya sauce
    1 tbs. sherry or white cooking wine
    Juice of 2 lemons (2 tbs.)
    4 tbs. honey

    BALANCE OF INGREDIENTS:
    3 tbs. vegetable oil
    1 tsp. ginger, chopped
    1 tsp. garlic, chopped
    1/4 tsp. each of salt and pepper
    3/4 cup chicken stock
    1 1/2 tbs. cornstarch blended with 3 tbs. cold water
    1/2 cup green onions (shallots), sliced
    1/2 cup red bell pepper, sliced

    Recipe



    Pierce chicken pieces with skewer or fork.

    Combine soya sauce, sherry, lemon juice and honey.

    Brush over chicken and let stand for 30 minutes.

    Heat oil, add genger, garlic and salt.

    On medium high heat add chicken pieces and brown evenly.

    Pour off excess oil and add marinade and stock.

    Simmer covered for 45 minutes (if chicken breasts, 30 minutes).

    Turn chicken twice during cooking.

    Remove chicken and place on a serving platter.

    Stir blended corn starch and water into the sauce and bring to a boil.

    Meanwhile stir fry green onins and red bell peppers.

    Strain sauce and spoon over chicken.

    Garnish with green onions, red peppers and lemon slices.
