    Fish Baked with Herbs and Lemon

    4 firm whitefish fillets, about 6 oz. each (cod, haddock, flounder, snapper)
    1 Tablespoon olive oil
    salt and freshly-ground pepper to taste
    1/2 cup fresh Italian parsley leaves
    1 clove garlic, minced
    2 Tablespoons chopped fresh lemon zest

    Preheat the oven to 450 degrees. Place the fish in a large baking dish or oven-safe non-stick skillet. Drizzle with the oil and sprinkle with salt and pepper to taste.

    Finely chopped the parsley, garlic and lemon zest together. Sprinkle over the fish. Bake until the fish has turned opaque in the center, about 10 minutes. Serve hot.

    Makes about 4 servings.
