    1/3 c granulated sugar
    1/3 c unsweetened cocoa powder
    1/8 tsp salt
    1 c skim milk
    1 c evaporated skim milk
    1/4 c honey
    1 large egg
    1 tsp vanilla extract
    1/4 tsp almond extract
    2/3 c miniature marshmallows, divided
    1/4 c chopped walnuts(optional)

    Recipe



    1. In a medium saucepan, combine sugar, cocoa, and salt. Mix well. Whisk in skim milk, evaporated skim milk, and honey until smooth. Cook over medium heat, whisking constantly, until mixture boils. Cook, whisking constantly, for 1 minute longer. Remove from heat.

    2. In a small bowl, whisk egg until foamy. Gradually whisk 1/4 c of the hot pudding mixture into the egg. Return egg mixture to saucepan, whisking constantly until blended.

    3. Cook pudding over medium-low heat, whisking constantly, unti, slightly thickened, about 2 minutes. Do not boil. Remove from heat. Stir in vanilla and almond extracts. Cool slightly.

    4. Add 1/3 c of marshmallows, stirring until marshmallows melt slightly. Do not overmix. Press plastic wrap directly on surface and cool to room temperature. Chill for 1 hour. Divide pudding between 8 dishes. Top with walnuts and remainig marshmallows.
