2 cups heavy whipping cream
1 cup buttermilk

Combine the cream and buttermilk in a large stainless or glass bowl. Stir thoroughly, cover and let stand at room temperature for about 24 hours, or until very thick. Stir, place in a clean container, cover and refrigerate up to a week.
Creme fraiche is so easy and versatile. You can boil it in a sauce and it won't curdle. You can serve over fruit, on a cobbler, with caviar, or as a sauce. It's much better homemade than any version you can buy.
Makes about 3 cups.
