    2 lbs. Round steak 1 inch thick
    2 Tablespoons salad oil
    water
    1/2 cup soy sauce
    2 teaspoons sugar
    1/4 teaspoon pepper
    1 clove garlic, minced
    3 carrots, peeled
    2 green peppers, cut in 1 inch squares
    8 scallions, cut in 1-1/2 inch lengths
    1/2 pound mushrooms, halved
    1 can (8 ozs.) Water chestnuts halved
    2 Tablespoons cornstarch
    1/4 cup water

    Cut steaks in strips 1/8 inch inch or thinner and 3 to 4 inches long (when steak is partially frozen, thin strips can be cut more easily). Brown strips in hot oil. Pour off drippings, measure and add water to make 1 cup. Combine with soy sauce, sugar, pepper and garlic and add to meat. Cover and cook slowly 40 minutes. Meanwhile, using vegetable peeler cut carrots lengthwise into thin strips and cut strips in half. Add carrots, pepper, scallions, mushrooms and water chestnuts to meat. Cover and continue cooking 15 minutes. Combine cornstarch and water and use to thicken cooking liquid for sauce. Makes 6 to 8 servings.
