    Minute Rice (see below)
    1 pound smoked sausage, cut into 1/4 inch diagonal slices
    1 1/3 cups chopped cooked ham
    2 stalks celery, chopped
    2 cloves garlic, minced
    1 medium onion, chopped
    1 (14 1/2 ounce) can beef broth
    1/2 teaspoon black pepper
    1/2 teaspoon ground red pepper

    Recipe



    1. Prepare Minute Rice as directed using 2 cups of water and 2 cups of rice.

    2. While rice cooks, combine sausage, ham, celery, garlic, and onion in a Dutch oven or stock pot. Cook over medium-high heat, stirring constantly until sausage is browned.

    3. Add broth, black pepper, and red pepper to Dutch oven; bring mixture to a boil. Reduce heat and simmer uncovered for 5 minutes, stirring occasionally. Stir in cooked rice.

    Posted by: lovemyRav4: I made this recipe a couple of nights ago and thought it was pretty good. I found it a little hot/spicy so next time I think I'll cut down on the pepper. Other than that, we liked it. I got it from a book I checked out from the library, Southern Living Our Best Quick & Easy Recipes. My suggestions: use chicken and/or shrimp in place of/in addition to ham; don’t use as much red and black pepper, maybe cut down to 1/4 teaspoon of each.
