Pineapple Sauce (microwave)

1/4 cup sugar
1 1/2 tbsp. cornstarch
1 (13-oz.) can crushed pineapple, light syrup, drained, syrup reserved
1/4 cup water
1 tsp. grated lemon zest
1/2 tsp. vanilla extract
Recipe
In a 1-1/2-qt. microwave-safe dish, combine the sugar, and cornstarch. Mix well with a fork.
Slowly add the reserved syrup to the sugar/cornstarch mixture, stirring well until smooth.
Stir in the crushed pineapple, water, lemon zest and vanilla.
Cover the dish (leave a small vent if you cover with plastic wrap) and microwave on HIGH (100% power) for 4-1/2 to 6-1/2 minutes, or until mixture thickens. Stir every 2 minutes.
Makes 2 cups.
