Blackened Mahi with Pineapple Salsa

List of Ingredients
4 Mahi filets, 8 oz. each
1 cup chopped fresh pineapple
1 red and green bell pepper
1 Tbsp. finely chopped onion
1 Tbsp. lime juice
1 tsp. chili powder
1/2 jalapeno pepper, finely chopped
1/8 tsp. ground cumin
1/8 tsp. cayenne pepper
Salt and pepper
4 Tbsp. blackening seasoning
1 oz. canola oil Recipe
To prepare salsa, combine pineapple, bell pepper, onion, lime juice, chili powder, jalapeno pepper, cumin and cayenne pepper. Season to taste with salt and pepper. Set aside. Rub blackening seasoning on both sides of Mahi. Heat canola oil in a large skillet over medium high gas heat. Cook Mahi for 4-5 minutes on each side until done. Heat the salsa in a sauté pan for 30 seconds and serve over the Mahi filets. Garnish with fresh chopped parsley.
