List of Ingredients
4 trigger filets (8 oz. each)
2 cups all purpose flour
2 Tbsp. onion powder
1 Tbsp. garlic powder
1 tsp. black pepper
2 Tbsp. salt
3 eggs
2 cups milk
1 1/2 cups crushed pecan pieces
1/4 cup olive oil
Splash of white wineRecipe
To make egg wash, mix eggs and milk and set aside. To make pecan meal, mix flour, pecans and seasonings. Dip trigger filet into flour mixture and then into egg wash and repeat. In a large saute pan, add the olive oil and heat. Place fish in pan and cook 3-4 minutes on each side until golden brown. Add a splash of white wine and finish fish in a 400ºF oven for 4 minutes.
