    1 lb. box Rigatoni, uncooked
    1 lb. rope style hot or sweet Italian sausage
    1/2 cup chopped onion
    1 3/4 cups (15 oz.) Ricotta Cheese
    3 cups (about 28 oz. jar) spaghetti sauce
    1 cup shredded mozzarella cheese
    3 Tbsp. grated Parmesan cheese

    Heat oven to 400 degrees F. Cook pasta according to package directions; drain.

    Meanwhile, in 5 quart saucepan over medium heat, cook meat until brown on both sides. Remove from pan, slice into thin slices. Return meat to pan with onion; cook 5 minutes or until onion is tender and meat is thoroughly cooked. Stir in hot pasta and ricotta cheese until well blended.

    In 9 X 13 inch greased baking dish, spread l cup spaghetti sauce; spoon pasta mixture over sauce. Spread remaining spaghetti sauce evenly over pasta; sprinkle with remaining cheeses.

    Cover with foil; bake 20 minutes. Remove foil, bake 5 minutes or until hot and bubbly.

    12 servings (1 cup each)
