    Spaghetti Alla Amatriciana

    4-5 T olive oil
    4 oz bacon, diced (or pancetta)
    2 c finely diced tomato (fresh)
    salt to taste
    1/4 c romano cheese
    1 (1 lb) pkg spaghetti, cooked and drained

    If using meaty bacon, fry it in the olive oil. Otherwise, just fry it like normal. Add the tomatoes; cook an stir until thickened. Mix sauce with spaghetti. Top with romano cheese and toss.

    Posted by: maltesebaby: This is such a simple dish, but you wouldn't know it by the name. Actually, the name is just from the town in Italy where it originated (Amitrice). It's just spaghetti with bacon and tomatoes. Cheap eats!
