Sweet Potato Pies (makes 2)

2 pie shells
5 medium sweet potatoes
1 cup sugar
3 eggs
1 tsp. cinnamon
1 Tblsp vanilla extract
1/2 Cup sweet milk
3/4 stick margarine

Recipe



Prick bottom and sides of two pie shells with fork. Put in preheated 400ºF oven for about 5 minutes or until just beginning to brown. Remove from oven and let cool.

Boil sweet potatoes in jackets until tender. Let cool and peel.

Mash potatoes, add rest of ingredients and mix well. Put into pie shells and bake in 400 degree oven until brown (about 45 minutes).
