    Hearty Sausage Mini Quiches

    1/2 cup thinly sliced green onion
    1/2 cup diced sweet red pepper, optional
    1 cup thinly sliced mushrooms or yellow squash, optional
    1 cup frozen cubed hash brown potatoes or diced red potatoes
    1 TBSP. olive oil, butter or margarine
    1 pkg. Regular Flavor JIMMY DEAN Roll Pork Sausage, cooked, crumbled and drained
    1 cup (4 oz.) shredded cheddar, mozzarello or provolone cheese
    8 eggs, lightly beaten
    1/4 cup milk or water
    1 tsp. salt
    1/4 tsp. pepper
    1/4 cup Parmesan cheese, optional

    Recipe



    In a large skillet, saute onion and other vegetables if desired in oil until vegetables are tender. Add sausage and cheddar cheese; stir well. Distribute sausage mixture evenly into foil-lined muffin cups.

    In a bowl, combine eggs, milk, salt and pepper; pour over sausage mixture. Bake at 350ºF for 22 minutes or until eggs are set. Sprinkle with Parmesan if desired.

    Yield: 12-16 servings.

    My notes: these are regular size muffins...more like an individual serving not "mini" sized.
