    Heavenly Chicken Quiche with Mushrooms, Onions and Cheese

    List of Ingredients

    1 deep dish frozen 9" pie shell. [Place on a cookie sheet and bake in a 400 oven for about 8 minutes or until shell is just beginning to color.]
    1/4 pound mushrooms
    1 onion, chopped
    2 shallots, minced
    2 cloves garlic, minced
    3 t. butter
    1 1/2 cups diced cooked chicken (white meat preferred)
    3 eggs
    1 1/2 cups cream (can use half and half)
    1 cup grated Swiss cheese
    1/2 cup grated Parmesan cheese

    Recipe

    In a large skillet, sauté together first 5 ingredients until onions are soft. Stir in the cooked chicken. Place mixture into partially baked pie shell. Beat together the remaining ingredients until blended and pour it into the pie shell. Ease the egg mixture into the mushroom mixture so that it is distributed evenly. Place on a cookie sheet and bake in a 350ºF oven for about 40 to 45 minutes or until custard is set and top is golden brown.

    Makes 4 generous servings as a main course.

    Note: Pie can be baked earlier in the day and heated at serving time. Oh, what a glorious pie to serve for a luncheon or a light supper. It is a beautiful combination of flavors and texture. Chicken breasts are best for this, however, keep this dish in mind, if you are planning to glamorize some leftover chicken. Add a vegetable salad and warm spiced fruit as lovely accompaniments.
