    4 chicken breasts, skinned boned & split (I use boneless, skinless chicken breasts)
    1 C Cracker crumbs (any type of cracker will work, ritz is good)
    2 eggs, well beaten
    1/2 C butter plus 2 Tbs vegetable oil
    1 large can mushrooms, stems & pieces (may also use fresh mushrooms sauteed in a garlic butter, yum)
    2/3 C water
    1/2 tsp EACH: seasoned salt, pepper, onion powder, and salt
    1 C grated Mozzarella Cheese

    Pound chicken breasts to flatten.(I only flatten a little, so not too thin.) Combine cracker crumbs & seasoning. Coat chicken in cracker mixture, dip in egg and return to cracker mixture. Refrigerate 30 mins, allowing cracker and egg mixture to set.

    Melt butter & oil in large skillet. Brown chicken, Place in baking dish. Add water, cover with foil and bake at 350°F for 1 hour.

    Sauté mushrooms, add to chicken. Make sure there’s enough liquid so chicken won’t bake dry. Bake 30 mins longer; remove from oven and add cheese. When cheese has melted, serve.
