    Pineapple Chicken

    3 pounds chicken, cup into serving pieces
    1 cup pineapple juice
    1 tablespoon soy sauce
    1/4 cup brown sugar
    1 tablespoon cornstarch
    1/4 teaspoon ground ginger
    1 can (8 ounces) pineapple chunks

    Recipe

    Brown chicken in a skillet. Combine sauce ingredients in a saucepan and cook until it thickens. Pour sauce over chicken and simmer until chicken is tender. Serve over rice or chow mein noodles.

    Notes: This recipe was originally worked up cutting up a whole chicken. The weight included the weight of the bones, which you removed.....but my sister uses only chicken breasts, and usually uses about 5 or 6 of them. She cuts them into small pieces so that they cook fast. It will make 5 or 6 servings using 6 breasts. It is a very forgiving recipe and there are many variations of it..just use the google search and you'll see how many!

    If you like more sauce, you can double the sauce recipe, or just use a little more juice, etc. I'm sure you could also use whatever chicken pieces you had, if you wanted to use thighs, you could use thighs.

    Another thing she does, is to make a paste with the cornstarch before she puts it in the sauce...she'll heat up all the other sauce ingredients until warm and then stir the cornstarch paste into it to thicken it without getting the clumps...just uses a little warm water and the cornstarch.
