    8 serving pieces of chicken (breasts, thighs or a combination)
    1/2 cup flour
    1/3 cup oil
    1 teaspoon salt
    1/4 teaspoon pepper
    Large can chow mein noodles (optional)
    3 tablespoons minced parsley

    SAUCE
    1 can (1 pound 4 ounces) pineapple tidbits
    1 small can pineapple juice
    1 cup brown sugar
    3 tablespoons cornstarch
    3/4 cup cider vinegar
    1 tablespoon soy sauce
    1/4 teaspoon ground ginger
    1 chicken bouillon cube
    1 large green bell pepper, cut into 1-inch pieces
    1 large red bell pepper, cut into 1-inch pieces

    Wash the chicken and pat dry with paper towels. Coat the chicken with flour. Heat the oil in a large skillet. Add the chicken, a few pieces at at time, and brown on all sides. Remove to a shallow pan, arranging pieces skin-side up. Sprinkle with salt and pepper.

    Preheat oven to 350 degrees.

    To make sauce, drain pineapple, pouring liquid into a 2-cup measure. Add pineapple juice or water to make 1-1/4 cups.

    In a medium saucepan, combine brown sugar, cornstarch, pineapple liquid, vinegar, soy sauce, ginger and bouillon cube. Bring to a boil, stirring constantly. Boil 2 minutes.

    Pour sauce over chicken. Bake uncovered 30 minutes. Add pineapple, and red and green bell pepper. Bake 30 minutes longer, or until chicken is tender.

    Line a serving dish with chow mein noodles, if desired. Place chicken on top. Spoon sauce over chicken and sprinkle with minced parsley.
