Baked Herb Rice

3 T. butter or olive oil
1 small onion, chopped
1 c. long grain rice
2 c. hot chicken, beef or vegetable broth
2 T. chopped fresh chives (or 2 t. dried)
1 T. chopped fresh tarragon (or 1 t. dried)
salt and pepper to tasteRecipe
Heat butter in a saute pan and saute onion until tender but not brown, about 5 mins. Add rice and stir to coat rice well. Add remaining ingredients, cover tightly and bake in a preheated 375� for 25 mins.
