Salsa Verde Seafood with Yellow Rice

1 (8 ounce) package of yellow rice mix, cook according to package directions
2 cups (16 ounces) of store-bought salsa verde [If you can’t find salsa verde, green enchilada sauce is a good substitute.]
1/2 pound shelled and deveined shrimp
1/2 pound scallops
Recipe
Cook yellow rice mix according to package directions.
About 10 minutes before the rice is done, pour store-bought salsa verde into a medium skillet and heat over medium heat. Add shrimp and scallops, and cook until the seafood is just opaque, about 5 minutes.
Spoon the scallops, shrimp and salsa verde over the yellow rice.
Serves 4
