List of Ingredients
10 to 12 large shrimp
10 to 12 thin slices of prosciutto
1 honeydew or cantaloupe melon
1/2 c maple syrup
3 T lime juice
10 to 12 skewers
Recipe
Shell and devein the shrimp. Cut down the back and semi-butterfly the shrimp.
Cut a small curved slice of melon and place it in the slit.
Wrap the shrimp and melon with a single, thin slice of prosciutto. Repeat the process for all of the shrimp.
Put 4 to 5 shrimp sideways on a skewer.
Place the skewers on a very hot oiled grill. Baste with a mixture of maple syrup and lime juice. Cook about 2 minutes on each side, until the shrimp turns a bright orange. Do not overcook.
Serve on a plate of rice or salad greens.
