CHIVE-POTATO SOUFFLE

3 eggs, separated
2 cups cooked instant mashed potatoes
1/2 cup sour cream
2 heaping Tbsp chopped chives
Recipe
Preheat oven to 350�F. Beat egg whites until stiff and set aside. Beat yolks until smooth and add to potatoes. Fold beaten egg whites, sour cream, chives and 1 tsp salt into potato mixture and pour into 2-qt baking dish sprayed with Pam. Bake for 45 minutes. Serves 4
