CHIVE-POTATO SOUFFLE

3 eggs, separated
2 cups cooked instant mashed potatoes
1/2 cup sour cream
2 heaping Tbsp chopped chives
Recipe
Preheat oven to 350ºF. Beat egg whites until stiff and set aside. Beat yolks until smooth and add to potatoes. Fold beaten egg whites, sour cream, chives and 1 tsp salt into potato mixture and pour into 2-qt baking dish sprayed with Pam. Bake for 45 minutes. Serves 4
