1/2 cup cornmeal
1/2 cup flour
1 tsp. salt
3/4 tsp. baking powder
1 egg
1 cup buttermilk
2 Tbsp. butter, melted and cooled
1 cup cooked or grilled corn
1/2 cup onion,diced
1 cup grated monterey jack cheese

Mix the first 4 ingredients in a bowl. In another bowl mix the egg, buttermilk and butter; add to the dry mix and stir just to combine. Stir in the corn, onion and cheese. Heat a large skillet over med. high heat. Add some oil and heat. Drop the batter in 2 Tbsp. at a time and cook 2 min. flip and cook 1 more min. Serve with a dollop of sour cream on each cake.
