Cornbread Dressing from Blue Willow Inn

1/2 Cup Chopped Onions
1/4 cup chopped celery
1/4 Cup butter or margarine
4 Cups cornbread crumbs
2 Cups biscuit crumbs
4 eggs, slightly beaten
2 hard boild eggs, shelled
1/2 cup chopped chicken or turkey giblets
1 teaspoon dried sage
2 cups chicken broth
Recipe
Saute the onions and celery in the butter or margarine in a small skillet until the onions are soft. Preheat the oven to 350ºF.
In a large mixing bowl, combine the onions and celery with the cornbread and biscuit crumbs, beaten eggs and hard boiled eggs, giblets and sage. Mix well. Add the chicken broth and mix well again. Pour into a greased casserole or baking dish.
Bake for 35 to 40 minutes, or until golden brown. Makes 8 to 10 servings.
