    1 1/2 to 2 lb. Russet potatoes, peeled
    1/4 cup butter
    1/2 cup heavy cream
    2 T grated fresh horseradish root, or 1 1/2 tsp prepared horseradish
    1 or 2 tsp sea salt
    1/2 tsp. white pepper

    Boil potatoes in salted water until completely done, test by piercing deeply with a fork, when they fall off, they're done. Pour boiling water into awaiting bowl to preheat and place pot on stove to dry up all water.

    Meanwhile, in a small saucepan over low heat combine the butter and cream and warm gently only until the butter is soft and the mixture is hot. Pour water from mixing bowl and dry, add potatoes.

    Add the milk mixture and the horseradish and crush, then whip until smooth with an electric mixer on high speed. Season with salt and pepper to taste. More butter and cream can be added as needed. Cover warm bowl until serving time.
