    Old-Fashioned Bread Stuffing

    1 C. chopped celery
    1 C. sliced fresh mushrooms or 1 (4 oz.) can sliced mushrooms, drained (optional)
    1/2 C. chopped onion
    1/3 C. margarine or butter
    1 tsp. poultry seasoning or ground sage
    1/4 tsp. pepper
    1/8 tsp. salt
    8 C. dry bread cubes (see note)
    1/2-3/4 C. chicken broth or water

    Preheat oven to 350ºF.

    In medium saucepan, cook celery, fresh mushrooms (if using), and onion in margarine or butter until tender but not brown; remove from heat.

    Stir in poultry seasoning or sage, pepper and salt. Place dry bread cubes in a large mixing bowl; add onion mixture and, if using, canned mushrooms. Drizzle with enough broth or water to moisten, tossing lightly. Place stuffing in casserole dish (or two) that has been sprayed with nonstick spray. Cover and bake 25-30 minutes.

    You may also choose to stuff a turkey/chicken/duck with this stuffing. If using to stuff a bird: spoon some of the stuffing loosely into neck cavity. Pull neck skin to the back; fasten with a skewer. Lightly spoon more stuffing into body cavity. Continue preparing bird .

    NOTE:
    To make dry bread cubes, cut bread into small squares and bake at 300 degrees F. for 10-15 minutes or until dry, stirring twice; cool. Or let stand, loosely covered, at room temperature, for 8-12 hours.
