Potato Stuffing

This is an old Pennsylvania Dutch recipe.
List of Ingredients
1 large onion, finely chopped
2 - 3 celery ribs, finely chopped
6 T. butter or margerine
2 slices white bread, torn in pieces
3 cups mashed potatoes
2 T. minced fresh parsleyRecipe
In a large saucepan, saute the onion and celery in butter until tender. Remove from heat. Add the bread, potatoes and parsley, mix well.
Spoon into a greased 1 quart baking dish. Bake uncovered at 350º for 45 minutes or until top is lightly browned.
Yield 6 servings.
Can be easily doubled or tripled for large group.
